The Australian Agave Project came to life in 2019 when Top Shelf International (TSI) purchased a 374-hectare farm in the heart of the Whitsundays. The farm, we have named Eden Lassie, is now home to over 500,000 agave plants.
Eden Lassie Farm sits 20 degrees south of the equator on the doorstep of the Coral Sea and one of the 7 Wonders of the Natural World – the Great Barrier Reef. This positioning mirrors Mexico’s Jalisco – the town of Tequila – which is located 20 degrees north, making our farm an ideal location for growing agave.
Our world-leading research and development team at the farm is led by Prospect Agriculture Agronomist Chris Monsour, in conjunction with a team of experts the University of Adelaide.
Together, they are working on an exciting project on the development of new cultivation techniques to optimize soil and plant health, as well as optimization of fermentation and distillation from the agave.
It is our ambition to create a one-of-a-kind sustainably produced, premium Australian agave spirt that will compete with the very best in the world.
